What's the difference between Raw, Liquid
and Crystallized Honey?
Carlisle Honey offers two types of Pure Raw Honey and Honeycomb (comb honey)

Spring Blossom Honey (light):
Light in color with a very
delicate honey flavor - you can almost taste the blossoms! This honey is from
the early spring blossoms of fruit trees and spring flowers. Truly some
of the sweetest and finest tasting honey you can find.
Summer Wildflower Honey (dark):
Dark amber color
with a full bodied natural flavor. This honey is produced from nectar
gathered in July and August. It's richer color and deeper flavor reflect
the rich colors of summer.

About
our Honey - Our honey is raw, unheated
and unfiltered. That is, our raw honey is only strained to remove any bits of
honey comb wax, so it still contains original pollen because it is not filtered.
We do not heat the honey like commercial honey packers do to break down any
sugar crystals. That is why their honey will stay clear on the supermarket shelf.
Of course, heat above 115 deg destroys the antioxidants, important enzymes,
vitamins and other beneficial attributes. Also many people find that heated
honey looses much of its natural aroma and flavor.
We are a small producer with several hives on our own property located in a rural area away from commercial property and agricultural chemical use. Our apiary has been operated as an organic apiary for a number of years. The honey is produced in organic hives and is handled to organic standards. We depend on the bees for the rest.
Quiz:
This may help some appreciate honey bees a bit more:
Since one worker bee can gather 1/12 of a teaspoon of honey in her lifetime,
how many bees would be necessary to gather 1 pint of honey? Hint: (3 teaspoons
= 1 tablespoon, 16 tablespoons = 1 cup, 2 cups = 1 pint). Answer can be found
on this page.
